Our Biryani dishes are based on the Kolkata versions. Dum
Biryani is the footprint that the Moghul Empire left on the
northern part of India. The rice and meat are layered with
spices, herbs and kewra water, then topped with yoghurt,
ground cinnamon and fresh coriander. Finally cooked by
‘Dum Pukht’ (sealed and steamed) method.
